Set amid some of the oldest olive trees in Puglia, this 16th century sighting tower, originally constructed to avoid the attacks of the Turkish pirates, has been lovingly restored into a five star resort. The bedrooms are situated in a single storey building in the herbal gardens and are delightfully furnished using colours and materials that reflect the hotel's original era.
